Join our resident chef for our Mastering Modern Sauces class and learn the techniques for classic stocks and fine dining sauces. One common ground for all chefs, when tasting a plate of food, is that they will always taste the sauce first. 

SUCH AS:

  • Master Stock - Beef & Chicken. Knowing how to make a Master Stock is the kitchen equivalent to learning your ABC's, once you know this, you can make a multitude of dishes.
  • Bechamel - used to make a lasagne authentic, plus as a sauce over vegetables such as cauliflower. 
  • Beef jus - This is a French term meaning ''juice''. No roast or meat dish is complete without this perfect sauce.
  • Hollandaise - Its flavour is rich and buttery, with a mild tang, is well known as a key ingredient of eggs Benedict and is often paired with vegetables such as asparagus.
  • Mayonnaise - you won't ever want to buy mayonnaise again after learning how to make it from scratch.
  • Peppercorn Sauce - this is a culinary cream sauce reduced in the cooking process, prepared with peppercorn. Traditionally served with steak, however is also suited to Lamb, Chicken or even Fish.
  • Mushroom Sauce - a classic pub favourite. How to get it just right is the challenge we will show you to conquer.
